I can rarely resist a really good salsa, and this is one of the best recipes I’ve come across. It goes with almost anything, and keeps for a few days in the fridge.
Ingredients:
-
5–6 large, ripe, juicy tomatoes. Remove seeds and juice, and chop into small pieces.
-
1/2 large red onion, finely chopped.
-
1 green jalapeño. Remove seeds and chop finely.
-
A handful of chopped fresh coriander.
-
At least 2 cloves of garlic, pressed.
-
Juice of 2 limes. Salt and pepper.
Method:
Mix all ingredients in a bowl. Squeeze lime over, and season to taste with salt. Enjoy!
